“Guess what I’m making Megs?”
This is what my husband says to me on a late winter evening when I arrive home from yoga.
“Pancakes” he declares. Now, most people who think of pancakes, are not picturing those dehydrated, flat, blue, sheets pictured above. They’re probably envisioning something more like these:
Now these are also delicious, of course. But there is a love story that goes with the top ones.
Many moons ago, on a warm August afternoon, the love I have for my now husband, was fostered over these delightful blueberry ‘pancakes’ that were made by Ron and Nadine Artermis- of Living Libations during an afternoon in the woods where Josh and I first met David Wolfe.
As we sat lake side, eating these most amazing pancakes wrapped around Ron’s magical chocolates, well- love was all around for sure.
We now make these Raw Blueberry pancakes to honour that sweet weekend that sparked it all. Bonus- they are our absolute favourite travel snacks. Jam packed with fibre, antioxidants and deliciousness- security has no clue what they are- and so we never leave home without them.
Here is the very simple recipe
Fall In Love With Me Blueberry Pancakes
1 cup blueberries
1/2 cup ground chia
1/ 2 cup tocotrienols (rice bran solubles)
3 tablespoons raw honey
- Mix in a blender. Spread out like a pankcake on a dehydrator tray.
- Dehydrate over night.
- Enjoy
